Jangri | Sweets & Savouries
Diwali is right around the corner, and I know I am not the only one wondering which sweets to prepare this Diwali! After all, these feastivals are the few occasions when we can have all the sweets and savouries we wish without having to worry about anything. And ofcourse, Diwali is one of those festivals which has several sweets linked to it. One of them being Jangri or Jangiri. It sure does look like Jalebi, another Indian sweet, but it is a entirely different sweet.
Jangiri is a traditional sweet made with urad dal. It is usually prepared during Diwali in the Indian state, Tamil Nadu. And, many think that it is really difficult to make this sweet at home, but that is not the case. Believe me, making jangri at home is not tough, all you need is a little practice.
Urad Dal - 1/2 cup
Rice Flour - 4 tsp
Kesar Orange food colour
For Sugar Syrup:
Sugar - 2 cup
Water - 1 cup
Milk - 1 tsp
Cardamom powder - 1/2 tsp
Rose water - 1 tsp
1. Take half a cup of urad dal and soak it in enough water for about 2 hours.
2. Add this soaked dal to a mixer jar.
3. Add the rice flour and Kesari powder to the jar.
4. Grind the contents of the jar.
5. Pour a little water and grind it again, forming a fine batter.
6. Now, make the sugar syrup. Add two cups of sugar and a cup of water to a pan.
7. Heat it on a medium low flame.
8. Add a Tsp. of milk to the sugar syrup and continue heating it on a low flame. This makes it easier to remove the scukm from the syrup.
9. Add the cardamom powder and rose water to the sugar syrup to give it some flavour.
10. Now, empty the batter into a piping bag. (If you don't have a piping bag, use a zip-lock back. Just made a small hole at the bottom as shown in the video.)
11. Take a wide or deep saucepan and add enough oil or ghee. Once the oil or ghee is hot, you can fry the Jangri's.
12. Now, slowly using the piping bag, drop the batter into the pan while forming any shape you want. Make sure the flame is low while doing so.
13. After piping the batter into the pan, you can increase the flame again to a medium-high.
14. Fry the Jangri on both sides, and then remove it from the pan and place it into the hot sugar syrup.
15. After about 5 to 7 minutes, remove the Jangri from the syrup. You Jangri is ready to be served!
