Combine the yolk and 1/8 teaspoon of salt and pulse them in a food processor This should be added with mustard and one tablespoon of lemon juice and blended well The food processor’s motor must be kept on low and ¾ cup of olive oil must be added very slowly (don't pour too quickly or the mayonnaise will break) After that, remove the mayonnaise from the food processor
Now add at least one teaspoon of lemon juice, the garlic and the remaining olive oil in a bowl Season with salt and pepper to taste
Add some more lemon juice if desired
Put it in refrigerator for up to five days |
