Take a large saucepan or Tajine and add brown chicken breasts and canola oil chicken breasts
Heat for 3-5 minutes, remove the contents and set aside
Now take the garlic, onions and ginger and saute for 3 minutes
This should be added with nutmeg, turmeric, saffron, cinnamon and vegetable broth
This should be simmered for 3 minutes
Now add the tomatoes, beans and apricots
Simmer this again and then add the chicken breasts
Low heat a stovetop, cover the whole mix and cook for 20-30 minutes till the chicken is cooked completely
The dish is ready and can be served over couscous
It can be garnished with toasted cashews and cilantro |
