Take the cracked wheat and wash and soak it for at least 1/2 hour.
Now clean and wash the mutton thoroughly removing any excess fat
Add the ginger-garlic paste to the mutton
This should be mixed with red chilli powder, 1/2 teaspoon of salt, 1/2 tsp Garam masala and turmeric powder
Take the mutton and pressure cook on high for 8-10 min or till 4 whistles
Simmer it for another 15-20 min and shred it after it cools down
The cracked wheat must be boiled with Chana Dal and Urad
This should be added with 1tablespoon ginger-garlic paste, 2-3 green chillies, 1/4 teaspoon turmeric powder
Now add 8-10 cups of water along with 1/2 tsp black pepper corns
Cook it completely till water is absorbed by the wheat
Put the wheat in 2-3 batches in a blender and pulse for a few seconds
Remove and keep aside
Take another container and heat oil in it
Add it with all the spices, the shredded lamb, remaining green chillies
This should be added with the 1/2 cup fresh coriander and saute for 2-3 minutes
Now add curd and saute for another 10- 15 min till oil starts to float on top
Add 3 cups of water and bring it to boiling
Now add the cooked Wheat and mix it well by adding a little bit of Ghee
Check the salt from time to time and add if needed
Simmer it for atleast 1/2 hour and keep stirring in between
Haleem is ready and can be served hot garnished with fried onions, cashew nuts and fresh Coriander |
