Take a Kadhai and heat oil in it
Add Paanch Phutan when the oil is hot
This should be added with green chilli and finely chopped ginger
Fry it a little and add curry leaves to it
This should be added with chopped tomatoes and covered for a while
Take the red chilli powder, turmeric powder and salt and add
Add water in the pan such that the chutney needs to be thick
Allow it to cook for a while and add dates and Jaggery to it
Even sugar can be added but Jaggery gives more earthy flavor to the chutney
This should be simmered for a while till the chutney gets a thick consistency and tomatoes are cooked perfectly
Garnish it with coriander leaves once the whole mix cools down
The chutney is ready and can be had with parathas or as a side dish to meal of rice, dal and curries |
