Take the onion and char it on the gas flame
Turn it around on the flame so that all the skin is blistered and black but not burnt
Remove it from the gas flame and let it cool for 10-15 minutes and peel it
Doing this gives a smoky flavour to the onion juice
Chop the tomatoes, onion and coriander finely Mix the onions, tomatoes, chillies and coriander together
The mix must be slightly mashed to make it a semi-paste
This should be added with Salt, lemon and black pepper to taste
The salsa should be allowed to rest for 10 minutes before serving |
