Take a 9-inch microwave-safe pie dish and spray it with cooking spray or coat it with oil lightly
Take a fork and beat the egg, pepper and garlic salt in a mixing bowl
Add this with 1 cup of salsa, ground turkey and bread crumbs and mix the entire thing thoroughly.
This mixture should be transferred to a prepared baking dish so that a flat, round loaf about 1 1/2 inches thick can be formed
Now take the remaining 1/2 cup of salsa and mix it with oil in a small bowl. This should be stirred properly
The meatloaf must be loosely covered with wax paper and kept in microwave on high for 15 to 20 minutes
The dish must be rotating a quarter turn every 5 minutes till the meatloaf is no longer pink in the center and thermometer should show 160 F in the middle of the loaf to ensure the meat is fully cooked and eatable
The remaining salsa must be spread on top of the meatloaf and allowed to sit for 5 minutes before slicing
This spicy dish must be served with a green salad and few warm flour tortillas.
